This Flame Broiler Bottom is refered to as the Grease Drain Pan (item #31 in the manual). The flame broiler bottom serves two purposes. The first is catching and directing the grease drippings from cooking food towards the grease bucket. The second is to help in controling the flames reaching the grilling food. The holes on this part are directly over the firepot (burnpot). When the flame slider is positioned over these holes it will prevent the flames from reaching the food. But if you prefer a more seared doneness you move the slide cover away from the holes to allow the flames to reach the food.
